Baking, Baking, Baking!

On Sunday we had a bake sale to raise money for our church. It was our first one, and we're sure to have more because it was a huge success! We made $730. It was a learning experience, since we were not sure how to price things, and we didn't know what would sell the best. But, we had a lot of bakers, and it was a huge hit! I think we're going to try and have a sale about 4 times a year.
I LOVED the idea of the bake sale, because I had an excuse to make something new. Recently, I'd been thinking about making these cake pops I saw on an amazing blog called Bakerella.
Oh! How I love this site. The photography is amazing, too. Anyway, I made some cupcakes that were inspired from her site as well. I tried to take cute pictures, but I don't have a fancy smancy camera, nor do I have any skills as a photographer.
By the way, how cute is this sign (above)?? Rachelle (who headed up the sale) had her son make a sign. I couldn't get over how cute it was. I think we should laminate it and use it everytime!

Some of them had chocolate buttercream icing with chocolate sprinkles.


Here are the cake pops. They were a labor of love.
Luckily, Colin was willingly on baby duty all day Saturday while I worked on them.


Cake Pops.
Red Velvet cake with Cream Cheese Frosting mixed in, rolled into balls, put in the freezer, then dipped in chocolate candy, and covered in sprinkles. And I put them on lollipop sticks.
Wish I could say I thought of it myself, but, like I said,
it was completely inspired/copied from Bakerella.


And Cupcake Pops.
After I made about 30 or so of the cake balls, I decided to be adventurous and try these.
Same idea, but shaped the cake/icing mixture into a cupcake shape using a flower cookie cutter. Then dipped the bottom in chocolate, and the top in white chocolate.
Sprinkles and an m&m on top.
Finally I wrapped them up with a treat bag and tied a ribbon on.
Would love to have made little labels, but ran out of time.

I can't wait to try them again. Everything is easier the second time around. I'm anxious to try out some new ideas. I love an excuse to bake and use my cute frilly apron from Anthropologie. I'm sure you will seeing more for Cooper's first birthday. The brainstorming for his cake and other treats has begun!

Weekend fun

As I write this post, I'm listening to Cooper babble away in his crib and Jackson climb out of his bed. I'm also waiting for butter to thaw out and come to room temperature. I am having a serious craving for chocolate, and I have all the ingredients on hand ... so, what's a girl to do? I'm making chocolate chip cookies. Trying out a new recipe - so we will see how they turn out. I've never tasted a cookie I didn't like, so I am guessing they will be great!
What I really should be doing is folding the clothes, or mopping the floor, or cleaning some more windows. But, I am choosing differently!

This morning we went to a splash pad, but not much splashing was done. Cooper was relatively interested in the water, but MUCH more interested in eating his lunch. Jackson spent most of his time on the playground area - and insisted on picking up the mulch and throwing it after I repeatedly asked him not to. What's with kids and mulch? How can that be more fun that sliding or swinging or climbing or getting sprayed with water? I don't know, but I guess it is. Maybe I need to give it a try - I'll just go in the backyard, grab a handful from one of the flowerbeds, and give it a good toss. I'll have to post the results.

Anyway, after getting back from the splash pad and somehow losing one of Jackson's crocs while we were there, it was time to play for a while before naptime. The boys kept me laughing. Jackson is talking so well now and has quite a vocabulary. He does have some phrases that he uses pretty often, but can say just about anything. His favorite phrases include "be right back" or "way way way up!" and my favorite "big ole' ___" He will say "big ole truck" as we are driving down the road. Or "Big Ole' Hole" or "big ole' cookie." I never even realized I said that until he started saying it. It's amazing how much you learn about your own vocabulary when you have a little "parrot" to repeat it back to you all day long.

Cooper also has some new tricks up his sleeve. He recently starting saying "uh-oh," but at first he would just say it randomly to where it made me think, "hmm...did he just say that? or was he just making grunty noises and it sort of sounded like uh-oh?" But over the weekend he has really mastered this new skill and everytime one of us says it he immediately lets out a big "uuuuuhhhh - oooooooooohh." So, now, Jackson and Cooper have conversations using his new vocabulary. It sounds something like this ...

J: Uh-Oh!
C: uhhhhhhhh-ooooooohh
J: (giggles) Uh-Oh!
C: (grins) uhhhhhhhh-ooooooohh

And then this goes on for a long time. Cooper is also giving high-fives, waving, patting the table, and sticking his tongue out if you ask him to. He has other tricks that he does - but these are NOT performed on demand like the previously listed ones! He OCCASIONALLY will give a kiss. Most of the time, I say "Cooper - give me a kiss!" and he grins and turns away. Even when I try to sneak one in he swats at my face and pushes me away! It's heartbreaking, really! He very rarely will cuddle with us, but he loves to give big bear hugs and loves to be held. Kisses are not his thing, though.
He clapped this weekend for the first time (and only time since!). He also says "mama" and "dada" but again, not if you ask him to. He is all about doing things when he feels like doing them. I can just imagine what he is thinking when I am saying "say mamamama! say dadadadada, give me sugar." He just has a look on his face that says, "I am not a trained monkey, lady."

This past Friday, Colin took off of work so we could all have some time together. It was SO nice to have him on. Though, I have to say, and I think he would agree - it would take ALOT of getting used to if he were home with us everyday. I am thankful that he works outside of our home. I have lots of friends whose husbands do work from home, and they assure me that you adjust, but I don't have much faith that we would! I swear, I cannot get anything done while he is here. Getting the kids dressed, fed, and out the door takes twice as long, and I leave the laundry in the dryer for hours before I remember to fold it, at which point I have to dry it some more because it has so many wrinkles. I forget to start cooking dinner, diapers go unnoticed until they are REALLY wet or stinky.
Aside from not functioning so well with my normal routine, Colin and I did manage to get some things done around the house. He told me I was a slave-driver, and I think he was happy to get back to work today. We also got to take the kids to Celebration Park on Friday, and spent some time in the back yard playing which they love. All in all, it was a great weekend.
Oh, we also decided not to send Jackson to Mother's Day Out this year. We had registered him at Stonebridge Methodist back in January. At the time, Cooper did alot of crying. ALOT of crying. Poor Cooper. anyway, I was so eager to sign J up for a two-day-a-week program so I could have some time with just Cooper, and JAckson could get to have some fun. But, as the year went on, Cooper has thankfully decided that he also is a happy little kid - and would like to play too! They are really starting to have fun together, and they are at a really "easy" place right now. After talking about with Colin and everyone else who would listen for weeks, we decided it would be best just to hold on to the money every month, and use it for school next year. Jackson would n0-doubt love school and learn plenty of new things. But, I really don't think he needs it. He's two for goodness sake, and there is plenty of time for structured learning - but right now I think it's the smartest move for us to keep attending mom's group functions and learning through play. Let's face it, with Colin and myself for parents, the kids are going to be genius' no matter what. (ha) So, though there were many benefits to having him in school - I think this is the best decision for our family right now.

My Parents


Well, I know this picture is random. I have been in the process of organizing my digital pictures while I transfer them from our old laptop to this one. I came across this picture tinight and it really caught me off guard. First of all... wow! I was skinny. And Young! And Rested! And my hair wasn't falling out (one of the wonderful things that have happened since I had kids). I wish I would have realized it then. Now I feel flabby, old, tired, and bald! Hahaha. It was only a little over 3 years ago, but it seems like a lifetime ago. It was taken at the wedding of our friends, Mary and Chad.
I know that my mom is going to kill me for posting this picture - she's not really "in to" having her picture taken. I love that her hair is hiding my dad's face. This picture just makes me smile. I remember how much fun we had that day. I remember how my dad bought that coat the morning of the wedding. I remember how pretty Mary looked as a bride. I remember seeing friends that I hadn't seen in a long time. I remember how the seamstress left a stain on the front of the dress I was wearing. I remember being so thankful that Mary had chosen such pretty bridesmaid dresses!
The best part of the picture is seeing my parents together. I stay pretty busy with both boys, and I do think of my dad ALL the time. But, when I stop and look at a picture of him, I can't help but cry. I automatically remember the way he smelled, his laugh, how it felt to be hugged by him, ...
Since I have become a mother, I appreciate my parents even more. I know how much they sacrificied to allow Daniel and I to do all the things we did. Most of all - putting us through 12 years of Catholic school. And taking trips, going to camps, taking art class, being a girl scout -
I hope that I can do the same for our kids. I hope that I can do the same for our grandkids.
I still feel like my dad was cheated. He was a year away from retirement - and they were finally getting close to a point where they could relax and travel and enjoy life without 8-5 work everyday.
Dad, I love you, and I am so thankful for all that YOU did to make ME happy. Thank you for being a truly selfless parent. I miss you every hour of the day.
Mom, I know how hard it is to have Dad gone. You are, and always have been, the best mom ever. Who else would listen and seem genuinely interested in my day-to-day events, like how well the kids slept, what I am fixing for dinner, how many poopy diapers I changed ...
You and Dad made me who I am today. All the things that you gave up helped provide a truly rich childhood. Please know that I never take you for granted - I appreciate everything that you have done and still do for me.
I love you both.

Dairy and Dinner

Today we went to Lucky Layla Dairy Farm with, you guessed it, our mom's group. Thank goodness for our group. I've made some wonderful friends, and we get to do things we'd never do on our own. Moving to McKinney without having and friends or family was a bit overwhelming at first, but I have been so blessed with the people I have met. I never feel lonely here, and Jackson and Cooper have lots of friends their age. It was the best decision I made to join the group through our church. Of course, I miss our family like crazy, and I am ridiculously jealous of all my friends that live so close to their families.
Back to the farm - it was nice. It's a small local dairy farm, and they mostly make yogurt and cheese from their milk. I think it was over Jackson's head, but I learned alot. Strollers were not really do-able there, so I carried Cooper for an hour and it was hot. I didn't get a single picture of the boys with cows like I had hoped. So, I will just try and commit the experience to memory. Both boys liked it - Jackson was equally interested in the cows as the gravel on the road. Cooper was babbling away and reaching for everything. He loved being held the whole time.
Anyway, since I have no pictures to show of our field trip, here are some from later on in the day...

Firestation

My mom came in for a quick visit this week. And it just happened that on Thursday we were making a trip to the firestation with our mom's group. Last October, she was in town when we went then. I thought I was in labor with Cooper so she was here waiting for his arrival (It was a false alarm). It made me smile remembering how READY I was for the little guy to get here. I was SO big and tired of being pregnant.
This year Jackson really enjoyed it, and hasn't stopped talking about it since.
